Get Kale While it’s Still in it’s Peak Season!

Kale PlantsWe know we have mentioned previously how great kale is – but something this good bears repeating!

Vegetables are hailed as one of the most nutritious food groups – and rightly so!  Near the very top of that nutritious vegetable list is kale – which is packed full of nutrients that benefit the body. With high values of vitamins K, A, and C, as well as fiber and various phytochemicals – chemical compounds that research shows protect against certain cancers – kale is worth adding to your JumpstartMD-friendly meals often and abundantly! And, to make kale even more appealing, it is one of the “free” foods on the JumpstartMD program!

Kale is in peak season during the winter months, so now is a great time to add this leafy green to soups, stir-fry recipes, protein shakes or as a foundational green for your salad.

Another great recommendation – try baby kale (somewhat similar in size and texture to baby arugula)! You can find it at Whole Foods in the pre-packaged/pre-washed greens area.

One great way to add kale to your menu is to mix it and other veggies into a simple olive oil and garlic stir-fry dish with lean protein such as fish or chicken. It’s simple, easy to prepare, and your body will thank you for it! Happy kale-ing!
